You can ride on horses, cross long distances. But eating them would be a waste of the animal since they take a long time to breed.
The sheep, provide wool, meat and they're easy to keep and breed.
The early humans had no need for horses, they didn't travel huge distances and just wearing fur war ineffective.
Padding leather with wool provided humans with warmer clothes, easier to produce.
You could eat the meat and that's what for example early humans depended just as much as on agriculture.

I think some kind of peaceful revolution in China isn't too far off. The old guard Communists will probably be replaced with some kind of meritocratic but authoritarian oligarchy ruling the country like a business. Lots of important people in China are tired of economic and governmental inefficiencies, and most of China's population no longer wants to be shackled to North Korea. This is made even liklier by the impending possibility of a Chinese economic collapse, which has been drawing closer for a while now (see the uh-oh moments from 2012, 2015, etc.)
I think Russian politics goes through a period of instability after Putin's death, but it probably won't see the rise of a democratic government.
I can see Iran attacking Israel, but I'm not sure if nukes will be involved, or if America will intervene. But Iran absolutely will develop nuclear missiles. Obama's nuke deal made sure of this.
I think the Electoral College isn't long for this world. I like the EC, but not many other people do. American politics will probably swerve left for at least the next 50 or so years.
I think the US and China will eventually collaborate to instigate radical regime change in North Korea, following the development of a large nuclear arsenal with global reach. This won't happen soon, but the crisis can't be resolved any other way.
I'm pretty sure Iran will succeed in building its own Iron Curtain in the aftermath of the bloody downfall of ISIS. With their interventions in Iraq and Syria, it won't be hard for them to set them up as puppet states. They also have influence in Lebanon and Qatar. These client states will act as a buffer against Saudi Arabia and the Gulf States. I don't know how this will affect a war with Israel.
China, Russia, and the US will still continue their efforts to counterbalance each other. None of these nations wants an all-out war, so there probably won't be any.
Brazil will probably develop itself into a major regional power, especially if they fully give up on Socialism.
Venezuela's regime isn't long for this world.
Climate change won't be slowed by any emissions cuts (this has been proven), so the world's nations will at some point need to collaborate and develop carbon sequestration programs.
Water shortages will worsen in the world's arid areas.
India will sign the remaining two agreements required to be considered a full US ally.
African instability and poverty will continue.
Some form of the two-state solution will be agreed upon, but not anytime soon.
Japan's economy collapses due to their overabundance of old people. At some point, they will fully rebuild their military to counter China.
Taiwan and China maintain the status quo.
Greenland will vote for independence in order to keep their oil wealth.
Scotland, Greenland, and Catalonia will probably stay with their mother countries.
Cuba liberalizes.
